  • 1 cup unsalted butter, at room temperature Ensure butter is softened.
  • 2/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

Mix-Ins
  • 1 cup white chocolate chips or chunks Choose high-quality chocolate.
  • 1 cup dried cherries, chopped Fresh dried cherries are ideal.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the unsalted butter and powdered sugar until light and fluffy, about 3-5 minutes.
  3. Mix in the vanilla extract to incorporate it.
  4. In a separate bowl, whisk together all-purpose flour and salt, then gradually add this dry mixture to the butter mixture until just combined.
  5. Gently fold in the white chocolate chips and chopped dried cherries until evenly distributed.
  6. Cover the dough and refrigerate for about 30 minutes.
Baking
  1. Roll the dough into small balls (about 1 inch) and place them on a lined baking sheet. Flatten each ball slightly.
  2. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
