- Wash and chop your veggies into thin, bite-sized pieces.
- Evenly spread about ¼ cup of crumbled feta cheese over the surface of each tortilla. Optionally, drizzle with olive oil.
- Sprinkle the chopped vegetables and herbs on top of the feta.
- Season the layer with a pinch of salt and pepper.
- Start from one end of the tortilla and tightly roll it up, keeping the filling compact.
- Slice the rolled tortilla into 1-inch pinwheels and arrange on a serving platter.
Notes
Tortilla Rolls with Feta can be served cold, and they store well in an airtight container in the fridge for up to three days. Experiment with different fillings for variety.
