Ingredients
  

For the crust
  • 1 cup unsalted butter, softened Allow to come to room temperature for easy mixing.
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
For the cheesecake filling
  • 1 package (8 oz.) cream cheese, softened Ensure it's at room temperature for better blending.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Bring to room temperature for best results.
Optional toppings
  • colorful sprinkles or chocolate chips For decoration and added flavor.

Preparation
  1. Preheat the oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Gradually mix in the flour, baking powder, and salt until combined. Press the mixture into the bottom of the prepared pan into an even layer.
Baking the crust
  1. Bake the crust in the preheated oven for about 10-12 minutes or until lightly golden. Let it cool slightly while you prepare the cheesecake layer.
Making the cheesecake filling
  1. In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until fully incorporated. Blend in the eggs, one at a time, until just combined.
Combining layers and baking
  1. Pour the cheesecake filling over the slightly cooled crust, spreading it evenly.
  2. Return the pan to the oven and bake for an additional 20-25 minutes, or until the cheesecake is set and only slightly jiggly in the center.
Cooling and serving
  1. Allow the bars to cool at room temperature, then refrigerate for at least one hour before slicing.
  2. Once chilled, lift the bars out of the pan using the parchment paper, slice into squares, and serve with your favorite toppings!

Notes

For best results, use room temperature ingredients and avoid overmixing the cheesecake filling. Store in an airtight container for up to 5 days, or freeze for longer storage.
