Preparation
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal.
- In a large mixing bowl, combine the melted butter and brown sugar. Mix well until it’s combined. Add the eggs and vanilla extract, and whisk until smooth.
- In another bowl, whisk together the flour, baking powder, and salt until evenly mixed.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to keep your blondies chewy.
- Gently fold in the chopped strawberries, lemon zest, and lemon juice until evenly distributed.
Baking
- Pour the batter into your prepared baking pan, spreading it evenly. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the blondies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Transfer to a wire rack to cool completely before slicing into squares.
