Ingredients

  • 1 cup unsalted butter, melted
  • 1.5 cups brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
Add-ins
  • 1 cup chopped fresh strawberries Use fresh strawberries for best results.
  • 1 whole lemon, zest and juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, allowing some overhang for easy removal.
  2. In a large mixing bowl, combine the melted butter and brown sugar. Mix well until it’s combined. Add the eggs and vanilla extract, and whisk until smooth.
  3. In another bowl, whisk together the flour, baking powder, and salt until evenly mixed.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to keep your blondies chewy.
  5. Gently fold in the chopped strawberries, lemon zest, and lemon juice until evenly distributed.
Baking
  1. Pour the batter into your prepared baking pan, spreading it evenly. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the blondies to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Transfer to a wire rack to cool completely before slicing into squares.

Optional: Drizzle with lemon glaze or sprinkle with powdered sugar for added flavor.
