Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine mozzarella, cheddar, spinach, cream cheese, garlic, salt, and pepper until well mixed.
- Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten slightly with the back of a spoon.
- Bake for 8–10 minutes, or until golden brown and crispy around the edges.
- Let cool for a few minutes before removing from the sheet — they will crisp up more as they cool.
Notes
Make sure spinach is very dry to prevent soggy crisps.
Add red pepper flakes for a spicy kick.
Store leftovers in an airtight container for up to 3 days; re-crisp in the oven if needed.
