Spinach Dip Cheese Crisps

Crispy, cheesy bites packed with the flavors of creamy spinach dip — perfect as a low-carb snack, appetizer, or party treat.

Ingredients
  

  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup cooked spinach well-drained and chopped
  • 2 tbsp cream cheese softened
  • 1 garlic clove minced (optional)
  • Pinch of salt and pepper

  • Baking sheet
  • Parchment paper or silicone baking mat
  • Mixing bowl
  • Spoon

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine mozzarella, cheddar, spinach, cream cheese, garlic, salt, and pepper until well mixed.
  3. Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Flatten slightly with the back of a spoon.
  5. Bake for 8–10 minutes, or until golden brown and crispy around the edges.
  6. Let cool for a few minutes before removing from the sheet — they will crisp up more as they cool.

Notes

Make sure spinach is very dry to prevent soggy crisps.
Add red pepper flakes for a spicy kick.
Store leftovers in an airtight container for up to 3 days; re-crisp in the oven if needed.
