Ingredients
  

Cheese Mixture
  • 1 package 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
Add-ins
  • 1 can 10 oz diced tomatoes with green chilies, drained Like Ro-Tel
  • 1-2 jalapeños, diced Add more for extra heat
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • optional Fresh cilantro or green onions for garnishing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, and shredded pepper jack cheese.
  3. Stir in the diced tomatoes with green chilies, diced jalapeños, garlic powder, onion powder, and cumin. Season with salt and pepper to taste.
  4. Spread the cheese mixture evenly into a greased baking dish.
  5. Bake for 20-25 minutes, or until the dip is hot and bubbling.
  6. Remove from the oven, let it cool for a minute, and garnish with fresh cilantro or green onions if desired.
  7. Serve with tortilla chips, veggies, or crusty bread.

Notes

Control the spice by adjusting jalapeños. Make ahead and store in the fridge. Option to freeze for up to 2 months.
