Method
Prepare the Broth
- In a saucepan, bring the chicken broth to a boil.
- Add the gelatin, stirring until fully dissolved.
- Pour into a shallow dish and refrigerate until set (at least 1 hour).
Make the Dough
- In a large mixing bowl, gradually combine the flour and hot water, mixing until it forms a dough.
- Knead the dough on a floured surface for about 10 minutes until smooth. Cover and rest for 30 minutes.
Prepare the Filling
- In a bowl, blend ground chicken, soy sauce, sesame oil, ginger, salt, and pepper, mixing until fully combined.
Assemble the Dumplings
- Roll the dough into a log and cut into small pieces (about the size of a walnut).
- Flatten each piece into a circle, about 3 inches in diameter.
- Place a tablespoon of chicken filling in the center, followed by a small piece or spoonful of the set broth.
- Carefully pleat the edges, sealing the dumpling at the top.
Steaming
- Line a bamboo steamer with parchment paper and arrange the dumplings inside, ensuring they’re not touching.
- Steam over boiling water for about 8-10 minutes.
Notes
Serve with chili oil or soy sauce for dipping. Pair with cucumber salad, jasmine tea, or crispy wontons for a well-rounded meal.
