Ingredients
  

Dough
  • 2 cups all-purpose flour
  • ¾ cup hot water
Meat Filling
  • 1 pound ground chicken (or turkey)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 inch ginger, minced
  • Salt and pepper to taste
Broth
  • 2 cups chicken broth
  • 1 tablespoon gelatin (for richer broth)

Method
 

Prepare the Broth
  1. In a saucepan, bring the chicken broth to a boil.
  2. Add the gelatin, stirring until fully dissolved.
  3. Pour into a shallow dish and refrigerate until set (at least 1 hour).
Make the Dough
  1. In a large mixing bowl, gradually combine the flour and hot water, mixing until it forms a dough.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Cover and rest for 30 minutes.
Prepare the Filling
  1. In a bowl, blend ground chicken, soy sauce, sesame oil, ginger, salt, and pepper, mixing until fully combined.
Assemble the Dumplings
  1. Roll the dough into a log and cut into small pieces (about the size of a walnut).
  2. Flatten each piece into a circle, about 3 inches in diameter.
  3. Place a tablespoon of chicken filling in the center, followed by a small piece or spoonful of the set broth.
  4. Carefully pleat the edges, sealing the dumpling at the top.
Steaming
  1. Line a bamboo steamer with parchment paper and arrange the dumplings inside, ensuring they’re not touching.
  2. Steam over boiling water for about 8-10 minutes.

Notes

Serve with chili oil or soy sauce for dipping. Pair with cucumber salad, jasmine tea, or crispy wontons for a well-rounded meal.
