  • 2 cups chicken broth For a richer flavor.
  • 1 cup heavy cream Substitute with milk for a lighter version.
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced

Method
 

Preparation
  1. Season the chicken thighs generously with salt and pepper.
Cooking Chicken
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the chicken to the skillet and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken and set aside.
Sautéing Vegetables
  1. In the same skillet, reduce the heat to medium and add the onions and bell peppers.
  2. Sauté for about 4-5 minutes until softened. Stir in garlic and cook for an additional minute.
Making the Sauce
  1. Pour in the chicken broth and bring it to a simmer. Allow it to cook for about 2 minutes.
  2. Add in the heavy cream and mix well.
Combining and Simmering
  1. Return the chicken to the skillet, cover, and reduce the heat to low.
  2. Let it simmer in the sauce for 10 minutes so the flavors meld together.
Cooking Rice
  1. While the chicken is simmering, prepare the rice according to package instructions.
