  • 1 pound large shrimp, peeled and deveined
  • 2 cups cooked rice (white or brown)
  • 1 can (10.5 oz) cream of mushroom soup or your preferred cream soup
  • 1 cup shredded cheddar cheese plus more for topping if desired
  • ½ cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, and corn work great!)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If you haven’t already cooked your rice, now’s the time! Follow the package instructions and set it aside.
  3. In a large mixing bowl, combine the cooked rice, cream of mushroom soup, milk, garlic powder, and onion powder. Stir until the mixture is well combined.
  4. Gently fold in the shrimp and frozen mixed vegetables. Season with salt and pepper to taste.
  5. Pour this mixture into a greased 9x13 inch baking dish. Spread it evenly.
  6. Sprinkle the cheddar cheese evenly on top. Feel free to add extra cheese for that ultimate comfort food experience!
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the shrimp are fully cooked, and the cheese is bubbly and golden.
Serving
  1. Remove from the oven, garnish with fresh parsley if desired, and let it cool for a few minutes before serving.

Notes

For added depth of flavor, consider serving with a refreshing salad like a classic Caesar or a side of garlic bread. Optionally, you can prep the casserole the night before and store it in the fridge until ready to bake.
