Rotisserie Chicken and Stuffing Casserole

A cozy, crowd-pleasing casserole that combines tender rotisserie chicken, creamy sauce, and buttery stuffing topping. Comfort food made simple — perfect for weeknights or family gatherings

Ingredients
  

  • 4 cups cooked rotisserie chicken shredded
  • 1 box 6 oz stuffing mix (plus ingredients listed on package)
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • ½ cup chicken broth
  • 1 small onion finely diced (optional)
  • 1 cup frozen mixed vegetables peas, carrots, or corn
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp dried thyme optional

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. Prepare stuffing mix according to package directions. Set aside.
  3. In a large bowl, mix cream of chicken soup, sour cream, chicken broth, onion, vegetables, garlic powder, pepper, and thyme.
  4. Stir in shredded rotisserie chicken until coated.
  5. Spread mixture evenly into the prepared baking dish.
  6. Top with prepared stuffing, spreading evenly across the surface.
  7. Bake uncovered for 30–35 minutes, until bubbly and golden brown on top.
  8. Let rest for 5 minutes before serving.

Notes

Add extra vegetables like green beans or broccoli for more flavor and texture.
Use cream of mushroom soup for a richer twist.
Leftovers store well in the fridge for up to 4 days.
