  • 2 large sweet potatoes, peeled and cut into cubes
  • 4 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the cubed sweet potatoes with the olive oil, minced garlic, salt, and pepper. Mix well until the sweet potatoes are evenly coated.
Roasting
  1. Spread the sweet potato mixture evenly on a baking sheet lined with parchment paper.
  2. Place your baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through.
  3. Once the potatoes are tender and lightly browned, sprinkle the grated Parmesan over the top and roast for an additional 3-5 minutes until the cheese is melted and golden.
  4. Remove from the oven and garnish with fresh parsley if desired. Serve warm and enjoy!

Notes

For even cooking, cut sweet potatoes into uniform 1-inch cubes. You may also experiment with herbs such as rosemary or thyme for additional flavor.
