Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the cubed sweet potatoes with the olive oil, minced garlic, salt, and pepper. Mix well until the sweet potatoes are evenly coated.
Roasting
- Spread the sweet potato mixture evenly on a baking sheet lined with parchment paper.
- Place your baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through.
- Once the potatoes are tender and lightly browned, sprinkle the grated Parmesan over the top and roast for an additional 3-5 minutes until the cheese is melted and golden.
- Remove from the oven and garnish with fresh parsley if desired. Serve warm and enjoy!
Notes
For even cooking, cut sweet potatoes into uniform 1-inch cubes. You may also experiment with herbs such as rosemary or thyme for additional flavor.
