  • 4 medium sweet potatoes, peeled and diced
  • 2 tart apples cored and diced (Granny Smith or Honeycrisp work great)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup (optional for extra sweetness)
  • Salt and pepper to taste
  • ½ cup chopped pecans (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into small cubes, and do the same with the apples after removing the cores.
  3. In a large mixing bowl, combine the diced sweet potatoes and apples. Drizzle with olive oil and maple syrup (if using), then sprinkle with cinnamon, salt, and pepper. Toss everything together until well coated.
  4. Line a baking sheet with parchment paper for easy cleanup and spread the sweet potatoes and apples in a single layer on the sheet.
  5. Roast for about 25-30 minutes, turning once halfway through, until the sweet potatoes are tender and caramelized at the edges.
  6. Once done, remove from the oven, sprinkle with chopped pecans, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 15 minutes or microwave in short intervals.
