  • 1 whole whole chicken (3-4 pounds), cleaned and patted dry
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 whole lemon, quartered
  • 4 cloves garlic, crushed

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) to ensure a crispy skin.
  2. Place the cleaned chicken on a roasting pan or a suitable oven-safe dish. Pat it dry with paper towels for that perfect crisp.
  3. Rub olive oil all over the chicken, making sure to cover it well. Next, sprinkle salt, black pepper, garlic powder, and chopped rosemary evenly across the skin.
  4. Stuff the cavity of the chicken with the quartered lemon and crushed garlic cloves to infuse the meat with delicious flavor as it cooks.
Cooking
  1. Place the chicken in the preheated oven and roast for about 1 hour, or until the internal temperature reaches 165°F (75°C) when checked at the thickest part of the thigh.
  2. Once done, remove the chicken from the oven and let it rest for about 15 minutes before carving to allow the juices to redistribute for super succulent meat.

Feel free to experiment with different herbs and spices based on your preferences. For the best results, consider brining your chicken beforehand for added moisture and flavor. Serve with roasted vegetables, salads, or fluffy mashed potatoes for a complete meal.
