  1. In a large mixing bowl, combine pumpkin puree, peanut butter, and brown sugar. Stir until all ingredients are thoroughly mixed.
  2. Incorporate pumpkin spice and vanilla extract into the mixture, ensuring the flavors blend well together.
  3. Gradually add the oats to the mixture while stirring until you achieve a thick and chewy consistency.
  4. Gently fold in the chocolate chips, if using.
  5. Using a tablespoon, scoop out the mixture and form small balls or flat cookies on a lined baking sheet.
  6. Place the baking sheet in the fridge for at least 30 minutes to allow the cookies to set.
