Ingredients

Main Ingredients
  • 1 lb ground beef or turkey You can substitute with chicken or plant-based meat for a vegetarian option.
  • 1 can cream of mushroom soup (10.5 oz.)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups cooked egg noodles Ensure they're cooked al dente to avoid sogginess.
  • 1 cup shredded cheddar cheese For topping.
  • 1/2 cup crispy fried onions For topping.
  • Salt and pepper to taste

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef or turkey. Season with salt and pepper and cook until no longer pink, about 5-7 minutes. Drain any excess fat.
  3. Stir in the cream of mushroom soup and frozen mixed vegetables. Combine thoroughly and let it simmer for about 5 minutes.
  4. In a large mixing bowl, add cooked egg noodles to the meat mixture and stir until well incorporated.
  5. Transfer the mixture into a greased 9×13-inch baking dish. Top with shredded cheddar cheese and crispy fried onions.
  6. Place in the preheated oven and bake for 25-30 minutes, until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving. Enjoy your hearty and flavorful casserole!

Notes

For an extra crispy topping, broil the casserole for the last 2-3 minutes of baking, keeping a close eye to avoid burning. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
