  • 1/4 cup 1/4 cup cornstarch For thickening the filling.
  • 1 teaspoon 1 teaspoon vanilla extract For flavor enhancement.

Preparation
  1. Prepare the Pie Crust: If using a pre-made crust, follow the package instructions for baking. Allow it to cool before adding the filling.
  2. Blend the Pistachios: Get out a food processor and blend your shelled pistachios until they form a fine powder. Set aside a tablespoon of the crushed pistachios for garnishing later.
Cooking Filling
  1. In a saucepan over medium heat, combine the milk, granulated sugar, cornstarch, salt, and pistachio powder. Stir continuously until the mixture thickens and begins to boil.
  2. Remove the saucepan from heat and stir in the vanilla extract. Let it cool slightly before pouring it into the prepared pie crust.
Chilling
  1. Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
Serving
  1. Once chilled, top with whipped cream and sprinkle the reserved crushed pistachios for garnish. Slice, serve, and enjoy!

Notes

Use high-quality pistachios. Ensure the mixture thickens gently to maintain a smooth filling. Chill thoroughly before serving. Optional toppings include chocolate sauce or cocoa powder.
