Preparation
- Prepare the Pie Crust: If using a pre-made crust, follow the package instructions for baking. Allow it to cool before adding the filling.
- Blend the Pistachios: Get out a food processor and blend your shelled pistachios until they form a fine powder. Set aside a tablespoon of the crushed pistachios for garnishing later.
Cooking Filling
- In a saucepan over medium heat, combine the milk, granulated sugar, cornstarch, salt, and pistachio powder. Stir continuously until the mixture thickens and begins to boil.
- Remove the saucepan from heat and stir in the vanilla extract. Let it cool slightly before pouring it into the prepared pie crust.
Chilling
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set.
Serving
- Once chilled, top with whipped cream and sprinkle the reserved crushed pistachios for garnish. Slice, serve, and enjoy!
