Preparation
  1. Start by peeling, coring, and dicing your fresh pineapple. Make sure to choose a ripe pineapple for the best flavor.
  2. In a blender or food processor, combine the diced pineapple, coconut milk, honey (or agave syrup), vanilla extract, and lime juice. Blend until smooth and creamy.
  3. Once blended, pour the mixture into a large bowl or container. Cover and place it in the freezer for about 1-2 hours, or until it’s firm.
  4. After it’s chilled, scoop the mixture back into the blender and blend again for about 30 seconds to achieve a soft-serve texture.
  5. Serve immediately in bowls or cones, and feel free to get creative with your favorite toppings!

Notes

For best results, ensure your pineapple is perfectly ripe. Don’t skip the chilling step to achieve the desired soft-serve texture. Experiment with flavors by mixing in other fruits like bananas or mango.
