  • 1 teaspoon vanilla extract
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups fresh peaches, diced (about 3 medium peaches)
For the Brown Sugar Frosting
  • 0.5 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 cups powdered sugar
  • 3-4 tablespoons milk or heavy cream Adjust for desired frosting consistency.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a rectangular or round cake pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, and vanilla extract until blended.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until well combined.
  5. Fold in the diced peaches gently, ensuring they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared pan and smooth out the top with a spatula.
Baking
  1. Bake for about 40 minutes or until a toothpick inserted into the center comes out clean.
Frosting
  1. While the cake is baking, prepare the brown sugar frosting by creaming the softened butter and brown sugar together in a mixing bowl.
  2. Gradually mix in the powdered sugar and add milk or heavy cream until the frosting reaches your desired consistency.
  3. Once the cake has cooled completely, spread the frosting generously on top and serve!

Notes

For best results, use ripe peaches and avoid overmixing the batter. The frosting can be enhanced with a pinch of cinnamon.
