Method
Cooking Pasta
- In a large pot, bring salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside, reserving about a cup of pasta cooking water.
Sautéing Garlic and Spinach
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Toss in the fresh spinach and cook, stirring frequently, until it wilt—this should take around 2-3 minutes.
Making the Sauce
- Stir in the heavy cream and cook for a couple of minutes until it slightly thickens.
- Toss the cooked pasta into the skillet with the spinach and cream sauce. Mix well to ensure all the pasta is coated. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.
Finishing Touches
- Stir in the grated Parmesan cheese and season with salt and pepper to taste. Give it a final toss and remove from heat.
Serving
- Plate your Pasta with Spinach, garnish with extra Parmesan, and serve warm!
Notes
Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, microwave with a splash of cream or pasta water if it looks dry.
