Ingredients
  

Pasta and Cream Sauce
  • 8 ounces your favorite pasta (such as fettuccine or penne)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (plus extra for garnish)
  • 3 cloves garlic (minced) Be careful not to burn it!
  • 2 tablespoons olive oil For sautéing the garlic and spinach.
  • 2 cups fresh spinach leaves (washed and dried) Can substitute with other leafy greens.
  • to taste Salt and pepper

Method
 

Cooking Pasta
  1. In a large pot, bring salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside, reserving about a cup of pasta cooking water.
Sautéing Garlic and Spinach
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  2. Toss in the fresh spinach and cook, stirring frequently, until it wilt—this should take around 2-3 minutes.
Making the Sauce
  1. Stir in the heavy cream and cook for a couple of minutes until it slightly thickens.
  2. Toss the cooked pasta into the skillet with the spinach and cream sauce. Mix well to ensure all the pasta is coated. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.
Finishing Touches
  1. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Give it a final toss and remove from heat.
Serving
  1. Plate your Pasta with Spinach, garnish with extra Parmesan, and serve warm!

Notes

Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, microwave with a splash of cream or pasta water if it looks dry.
