Ingredients
  

Dry Ingredients
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
Wet Ingredients
  • 1 cup granulated sugar
  • ½ cup orange juice, freshly squeezed Use fresh for best flavor.
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Zest of one large orange
For Dusting
  • Powdered sugar Optional for dusting.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour and baking powder. Set aside.
  3. In another bowl, beat the eggs and granulated sugar until light and fluffy. Add vegetable oil, orange juice, vanilla extract, and orange zest, mixing until combined.
  4. Gradually add the dry mixture to the wet ingredients. Stir gently until just combined.
Baking
  1. Pour the batter into the prepared cake pan and smooth out the top. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  3. Dust with powdered sugar when ready to serve.

Notes

Use freshly squeezed orange juice for the best flavor. Don’t overmix the batter and check for doneness with a toothpick. Store leftovers in an airtight container at room temperature for up to 3 days.
