Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the flour and baking powder. Set aside.
- In another bowl, beat the eggs and granulated sugar until light and fluffy. Add vegetable oil, orange juice, vanilla extract, and orange zest, mixing until combined.
- Gradually add the dry mixture to the wet ingredients. Stir gently until just combined.
Baking
- Pour the batter into the prepared cake pan and smooth out the top. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Dust with powdered sugar when ready to serve.
Notes
Use freshly squeezed orange juice for the best flavor. Don’t overmix the batter and check for doneness with a toothpick. Store leftovers in an airtight container at room temperature for up to 3 days.
