  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice (approximately 2-3 lemons)
Glaze Ingredients
  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9×13 baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the melted butter and granulated sugar. Stir until the mixture is smooth and well combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients into the wet mixture. Stir until just combined. Gently fold in the lemon zest and lemon juice for that refreshing zing.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the brownies are baking, combine the powdered sugar and lemon juice in a small bowl until smooth.
  2. Once the brownies are cool, drizzle the lemon glaze over the top, slice into squares, and enjoy!

Notes

Use fresh lemons for the best flavor. Don't overmix the batter to ensure a tender texture.
