Preparation
- Gather all the ingredients and chop the herbs finely. The smaller the pieces, the more flavor will infuse into the patties.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, mint, garlic, oregano, lemon zest, lemon juice, egg, salt, and pepper. Use your hands or a spatula to mix everything until well-combined but take care not to overmix.
- With your hands, form the mixture into patties about 1 inch thick. Aim for even sizes for consistent cooking.
- Heat a skillet over medium heat and add olive oil. Once hot, carefully place the patties in the pan, cooking for about 5-7 minutes on each side or until they’re golden brown and fully cooked through (internal temperature should reach 165°F).
- Remove the patties from the skillet and let them rest for a few minutes. Serve warm with your favorite toppings and sides.
Notes
Experiment with herbs. Fresh basil or dill can also be wonderful additions. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
