For the Mashed Potatoes
  • 4 large russet potatoes, peeled and cubed Choose russet for fluffiest texture.
  • 1/2 cup unsalted butter Add extra richness with cream if desired.
  • 1/2 cup milk Use cream for a richer flavor.
  • to taste Salt and pepper Adjust to personal preference.
For the Toppings
  • 1 cup shredded cheese (cheddar, gouda, or your favorite) Feel free to mix cheeses.

  • to taste sour cream Optional for serving.

Method
 

Preparation
  1. Boil the cubed potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper, and mash until creamy and smooth.
  3. Preheat your oven to 400°F (200°C).
Assembly and Baking
  1. Spoon the mashed potato mixture into greased muffin tins, creating a slight indentation in the center for toppings.
  2. Sprinkle cheese on top of each cup and bake in the preheated oven for 15-20 minutes until golden and crispy.
  3. Remove from the oven and add any additional toppings of your choice before serving warm.

Notes

For leftover cups, store in an airtight container in the refrigerator for up to 3-4 days. Reheat in a preheated oven at 350°F (175°C) or microwave, ensuring they don't dry out. Can be frozen for up to a month when wrapped properly.
