  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 1 cup frozen mixed vegetables (corn, peas, carrots) Use any frozen veggies you prefer.
  • 1 tsp garlic powder
  • Salt and pepper to taste Salt and pepper, to taste
  • 1 cup breadcrumbs (for topping) Panko breadcrumbs work great for extra crunch.
  • 2 tbsp melted butter (for drizzling)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to prepare for baking.
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, shredded cheese, frozen vegetables, garlic powder, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.
  4. In a separate bowl, mix the breadcrumbs with melted butter until thoroughly coated.
  5. Evenly sprinkle the breadcrumb mixture over the chicken mixture in the baking dish.
Baking
  1. Place the casserole in the preheated oven and bake for 30-40 minutes, or until the top is golden brown and the casserole is heated through.
  2. Let it cool for a few minutes before diving in.

Notes

For variations, consider adding leftover veggies, different cheeses, or a layer of cooked bacon or sausage. Store leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze for up to 2 months.
