Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the softened cream cheese and butter until smooth and fluffy.
- Gradually mix in the granulated sugar, followed by the eggs, one at a time. Beat until well blended.
- Stir in lemon zest, lemon juice, and vanilla extract until fully combined.
Mixing Dry Ingredients
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring just until combined. Avoid over-mixing.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For serving, top with powdered sugar or lemon glaze. Can be stored at room temperature for up to 3 days, or refrigerated for a week. Freeze for up to 3 months.
