Cobbler Base
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted Make sure it is melted but not hot.
  • 3 large lemons (juiced and zested) Always use ripe lemons for juicy flavor.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sugar, flour, and salt. Stir until well combined.
  3. Add the milk, melted butter, lemon juice, lemon zest, and vanilla extract to the dry mixture. Stir until just combined but do not overmix.
  4. Grease an 8x8-inch baking dish and pour the mixture into it. Do not worry about it looking uneven; it will set up beautifully in the oven.
  5. Place your baking dish in the preheated oven and let it bake for about 30 minutes, or until the top is golden brown and bubbling.
  6. Let it cool for a few minutes before serving. Enjoy warm or chilled, with your favorite topping if desired.

Notes

Top it off with a scoop of vanilla ice cream or a dollop of whipped cream to enhance flavors. Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months.
