- Preheat oven to 400°F (200°C) and lightly grease a muffin tin.
- In a mixing bowl, combine mashed potatoes, eggs, cheddar, Parmesan, green onions, flour, garlic powder, salt, and pepper. Mix until smooth.
- Scoop the mixture into the muffin tin, filling each cup about ¾ full.
- Bake for 20–25 minutes, until golden brown and puffed.
- Cool slightly before removing from the tin. Serve warm.
Notes
Great for holiday leftovers or meal prep.
Add bacon bits, jalapeños, or herbs for extra flavor.
Best enjoyed fresh, but can be reheated in the oven to re-crisp.
