Leftover Mashed Potato Cheese Puffs

A genius way to use up leftover mashed potatoes—these cheesy, fluffy puffs are crisp on the outside, soft on the inside, and perfect as a snack, side dish, or appetizer.

Ingredients
  

  • 2 cups leftover mashed potatoes
  • 2 large eggs
  • ½ cup shredded cheddar cheese or mozzarella
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped green onions or chives
  • ¼ cup all-purpose flour or breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper

Equipment

  • Mixing bowl
  • Whisk
  • Muffin tin or mini muffin tin
  • Measuring cups and spoons
  • Spoon or scoop

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a muffin tin.
  2. In a mixing bowl, combine mashed potatoes, eggs, cheddar, Parmesan, green onions, flour, garlic powder, salt, and pepper. Mix until smooth.
  3. Scoop the mixture into the muffin tin, filling each cup about ¾ full.
  4. Bake for 20–25 minutes, until golden brown and puffed.
  5. Cool slightly before removing from the tin. Serve warm.

Notes

Great for holiday leftovers or meal prep.
Add bacon bits, jalapeños, or herbs for extra flavor.
Best enjoyed fresh, but can be reheated in the oven to re-crisp.
