  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 zests zest of key limes Use fresh key limes for best flavor.
  • 1/2 cup key lime juice Freshly squeezed is recommended.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add the cream cheese into the mix and beat until smooth.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, key lime zest, and juice until combined.
  6. Gradually add the dry ingredients into the wet mixture, mixing gently until just combined. Be careful not to overmix!
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve with toppings like fresh berries or a scoop of vanilla ice cream. For a refreshing drink, pair with iced tea or lemonade.
