  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 large egg
  • 2 tablespoons key lime juice Freshly squeezed for best flavor
  • Zest of 2 key limes
  • 0.5 teaspoon vanilla extract
  • Powdered sugar for dusting Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  4. Beat in the egg, key lime juice, key lime zest, and vanilla extract until well blended.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
Baking
  1. Use a cookie scoop or tablespoon to drop dough onto a parchment-lined baking sheet, spaced about 2 inches apart.
  2. Bake for 10 to 12 minutes, until edges are lightly golden. Centers may look underbaked.
  3. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  4. Dust with powdered sugar if desired.

Notes

Use freshly squeezed key lime juice and zest for the best flavor. If the dough is too sticky, refrigerate it for 30 minutes before scooping.
