  1. Ensure that your mashed potatoes are completely cooled and free from lumps. Measure out 1 cup.
  2. In a large mixing bowl, combine the cooled mashed potatoes, vanilla extract, and powdered sugar. Stir until the mixture is smooth.
  3. Gently fold in the shredded coconut until well incorporated.
  4. Using your hands, take small amounts of the mixture and shape them into small, oval-like potato shapes.
  5. Once shaped, roll each candy in cocoa powder to give it that potato-like appearance.
  6. Place the candies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.

Notes
