  • 0.5 cups unsalted butter (softened)
  • 2 large eggs
  • 0.5 cups milk
  • 1.5 teaspoons baking powder
  • 1 teaspoon vanilla extract

  • 1 cup heavy cream
  • 0.25 cups powdered sugar
  • 1 teaspoon vanilla extract
For Toppings
  • Chocolate syrup

  • Maraschino cherries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract.
  4. In another bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Spoon the batter into the prepared cupcake liners, filling them about two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let them cool completely.
Frosting and Decoration
  1. Whip heavy cream until soft peaks form. Gently fold in powdered sugar and vanilla extract, mixing until combined.
  2. Once the cupcakes are cool, pipe a generous swirl of frosting on each.
  3. Drizzle chocolate syrup, sprinkle with toppings, and finish with a cherry on top!
