Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, and vanilla extract. Stir until you have a smooth batter.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate the dry mixture into the peanut butter mixture until fully combined.
- Using a small cookie scoop or your hands, portion out small balls of dough (about 1 inch in diameter). Place them on the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Place the baking sheet in the preheated oven and bake for 8-10 minutes or until the edges begin to golden.
- Take the cookies out of the oven and immediately press a Hershey’s Kiss into the center of each cookie.
- Allow them to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use room temperature ingredients for easier mixing. Don’t overbake; you want them to be soft and slightly underbaked when you take them out. Consider sprinkling a touch of sea salt on top after baking for extra flavor.
