Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans) Chopped
  • 1 pinch salt
Wet Ingredients
  • 1 cup honey or maple syrup
  • 1 2 cup nut butter (peanut butter, almond butter, etc.)
  • 1 teaspoon vanilla extract
Mix-Ins
  • 1 2 cup dried fruit (raisins, cranberries, or apricots)
  • 1 4 cup chocolate chips (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, and a pinch of salt.
  3. In a separate microwave-safe bowl, mix the honey (or maple syrup), nut butter, and vanilla extract. Microwave for about 30 seconds until warm and stir until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until thoroughly combined. If you’d like, fold in any dried fruit or chocolate chips at this point.
  5. Transfer the mixture into your prepared baking dish. Press it down firmly with the back of a spatula or your hands.
  6. Bake for 15-20 minutes or until golden brown.
  7. Let the granola bars cool completely in the pan. Once cooled, lift them out by the parchment paper and cut into bars.

Notes

For variations, experiment with nut butters, sweeteners, or add toasted coconut flakes for extra crunch. Store in an airtight container for up to one week or freeze for up to three months.
