Ingredients
  

For the dough
  • 1 cup water
  • ½ cup unsalted butter You can substitute with salted butter if desired.
  • 1 cup all-purpose flour
For the filling
  • 4 large eggs
  • 1 cup shredded cheese Cheddar, mozzarella, or your choice.
  • 1 tablespoon fresh herbs Use parsley, thyme, or chives.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, combine water and butter over medium heat. Bring to a boil.
  3. Add flour and stir vigorously until a dough forms. Remove from heat and let cool for a few minutes.
  4. Incorporate the eggs into the dough, one by one, mixing well after each addition until smooth and glossy.
  5. Gently fold in the shredded cheese and chosen herbs. Season with salt and pepper.
  6. Use a spoon or piping bag to form small mounds of dough on a baking sheet lined with parchment paper, leaving enough space between each puff.
Baking
  1. Place the baking sheet in the preheated oven and bake for 20 to 25 minutes, or until they are golden brown and puffed up.
  2. Remove from the oven, cool for a few minutes, and enjoy warm.

Notes

These puffs can be stored in an airtight container in the fridge for up to 2 days. To reheat, warm in the oven at 350°F (175°C) for about 10 minutes. For freezing, keep in a single layer and store in a freezer-safe bag for up to a month.
