- Grill or pan-sear chicken breasts until cooked through, then slice.
- If using fresh or frozen corn, char it in a hot skillet until slightly golden.
- In a large bowl, arrange greens, corn, bell pepper, avocado, and red onion.
- Top with sliced chicken, cheese, and cilantro.
- In a small bowl, whisk together yogurt, mayonnaise, lime juice, chili powder, paprika, garlic powder, salt, and pepper.
- Drizzle dressing over the salad and toss lightly before serving.
Notes
Make it meal prep–friendly: Store chicken, salad base, and dressing separately.
For extra heat, add a pinch of cayenne or jalapeño slices.
Swap chicken for shrimp or black beans for a vegetarian version.
