Healthy Street Corn-Inspired Chicken Salad

A light yet flavorful salad inspired by the bold, zesty flavors of Mexican street corn! Juicy grilled chicken, charred corn, crisp veggies, and a creamy-tangy dressing make this salad perfect for a wholesome lunch or dinner.

Ingredients
  

  • For the Salad:
  • 2 grilled chicken breasts sliced
  • 2 cups romaine or mixed greens
  • 2 cups corn kernels fresh, canned, or frozen – charred if possible
  • 1 red bell pepper diced
  • 1 avocado sliced
  • ¼ cup red onion finely diced
  • ¼ cup cotija cheese or feta
  • Fresh cilantro chopped
  • For the Dressing:
  • ½ cup plain Greek yogurt
  • 2 tbsp mayonnaise optional for creaminess
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste

  • Mixing bowls

Method
 

  1. Grill or pan-sear chicken breasts until cooked through, then slice.
  2. If using fresh or frozen corn, char it in a hot skillet until slightly golden.
  3. In a large bowl, arrange greens, corn, bell pepper, avocado, and red onion.
  4. Top with sliced chicken, cheese, and cilantro.
  5. In a small bowl, whisk together yogurt, mayonnaise, lime juice, chili powder, paprika, garlic powder, salt, and pepper.
  6. Drizzle dressing over the salad and toss lightly before serving.

Notes

Make it meal prep–friendly: Store chicken, salad base, and dressing separately.
For extra heat, add a pinch of cayenne or jalapeño slices.
Swap chicken for shrimp or black beans for a vegetarian version.
