  • 2 cups rolled oats
  • 1 cup mashed ripe banana (or applesauce) Riper bananas result in sweeter bars.
  • 1/2 cup almond butter (or peanut butter) Nut butter variations can be used.
  • 1/4 cup honey or maple syrup
  • 1/2 cup mini chocolate chips Can substitute some with dark chocolate chunks.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine the mashed banana (or applesauce), almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and creamy.
  3. Add the rolled oats, baking powder, and a pinch of salt. Mix well to combine.
  4. Fold in the mini chocolate chips until evenly distributed.
  5. Transfer the mixture into the prepared baking pan, pressing it down firmly with a spatula.
Baking
  1. Bake in the preheated oven for about 20-25 minutes or until the edges are golden brown.
  2. Cool in the pan for about 10 minutes before lifting it out using the parchment paper. Allow to cool completely on a wire rack before slicing into bars.

Notes

These bars can be customized with different mix-ins like nuts or dried fruits. They can be paired with yogurt, almond milk, or a fresh fruit salad.
