Preparation
- Preheat your oven to 400°F (200°C).
- Boil the diced sweet potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
- In a large skillet over medium heat, add a splash of olive oil. Sauté the diced onion and minced garlic until fragrant.
- Add the ground turkey to the skillet and cook until browned, about 5-7 minutes.
- Stir in paprika, thyme, salt, and pepper, mixing well to combine.
- In a baking dish, layer the cooked ground turkey on the bottom, then spread the drained sweet potatoes evenly on top.
- Pour the chicken or vegetable broth over the entire dish.
- Sprinkle shredded cheese on top if desired.
- Bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven, allow to cool slightly, and serve warm.
Notes
Pair with a refreshing side salad or garlic bread. For substitutions, ground chicken or lentils can be used instead of ground turkey.
