  • 1 pound ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) For a gooey topping
  • ½ cup chicken or vegetable broth
  • Olive oil For sautéing

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Boil the diced sweet potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
  3. In a large skillet over medium heat, add a splash of olive oil. Sauté the diced onion and minced garlic until fragrant.
  4. Add the ground turkey to the skillet and cook until browned, about 5-7 minutes.
  5. Stir in paprika, thyme, salt, and pepper, mixing well to combine.
  6. In a baking dish, layer the cooked ground turkey on the bottom, then spread the drained sweet potatoes evenly on top.
  7. Pour the chicken or vegetable broth over the entire dish.
  8. Sprinkle shredded cheese on top if desired.
  9. Bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Remove from the oven, allow to cool slightly, and serve warm.

Notes

Pair with a refreshing side salad or garlic bread. For substitutions, ground chicken or lentils can be used instead of ground turkey.
