Preparation
- In a bowl, combine olive oil, lemon juice, garlic powder, salt, and pepper. Add the shrimp and toss to coat evenly. Let it marinate for about 10-15 minutes.
- Heat your grill or grill pan over medium-high heat. If using a grill pan, lightly grease it with cooking spray.
Grilling the Shrimp
- Place the marinated shrimp on the grill. Cook for about 2-3 minutes per side or until the shrimp turn pink and opaque. Remove them from the heat.
Assembling the Wraps
- Warm the tortillas on the grill for about 30 seconds on each side until they are pliable.
- On each tortilla, layer the chopped romaine, grilled shrimp, a generous drizzle of Caesar dressing, and a sprinkle of Parmesan cheese. If desired, toss in a few croutons.
- Fold in the sides of the tortilla and roll it up tightly from the bottom. Secure with a toothpick if necessary.
