  • 3 pieces ripe peaches, diced Select ripe peaches that give a little when squeezed
  • 1 medium tomato, diced
  • 1/2 medium red onion, finely chopped
  • 1 piece bell pepper (red or yellow), diced
  • 1 piece jalapeño pepper, minced (optional for spice) Adjust spice level to preference
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime, juiced Juice provides acidity
  • to taste salt and pepper Season to taste

Method
 

Preparation
  1. Begin by washing all your fresh produce.
  2. Dice the peaches, tomato, bell pepper, and red onion into small pieces.
  3. In a medium bowl, combine the diced peaches, tomato, bell pepper, and red onion.
  4. If you like a little heat, add the minced jalapeño pepper. Otherwise, leave it out.
  5. Toss in the freshly chopped cilantro and squeeze the lime juice over the mixture.
  6. Add salt and pepper to taste, mixing everything well.
  7. Let the salsa chill in the fridge for about 30 minutes before serving.

Notes

Best served on grilled meats, tacos, or with tortilla chips. Can be stored in an airtight container in the refrigerator for about 3 days.
