Ingredients
  

For the Strawberry Filling
  • 4 cups fresh strawberries, hulled and sliced Use fresh strawberries for the best flavor.
  • 0.5 cups granulated sugar Divided into two portions.
  • 2 teaspoons lemon juice To enhance the strawberry flavor.
For the Cobbler Batter
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon Optional topping.

Method
 

Preparation
  1. In a large bowl, combine the sliced strawberries, ½ cup of sugar, and lemon juice. Let this sit for about 10-15 minutes, allowing the strawberries to macerate and release their juices.
  2. Preheat your oven to 350°F (175°C) while you prepare the cobbler batter.
Making the Batter
  1. In another bowl, mix the flour, baking powder, salt, and remaining ½ cup of sugar. Gradually whisk in the melted butter, milk, and vanilla extract until just combined.
Assembling and Baking
  1. Pour the strawberry mixture into a 9x13-inch baking dish. Then, gently spoon the batter over the strawberries without stirring.
  2. Sprinkle the cinnamon on top, if using, and bake for 30-35 minutes, or until the cobbler is golden brown.
Serving
  1. Let it cool slightly before serving warm, ideally with a scoop of vanilla ice cream on top!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat at 350°F for 15 minutes, being careful not to overbake.
