For the Sauce
  • 2 tablespoons olive oil for sautéing
  • 1 tablespoon all-purpose flour to make the roux
  • 2 tablespoons chili powder adjust for more spice if desired
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 can (15 ounces) tomato sauce
  • 1 cup vegetable broth to adjust consistency
  • to taste Salt and pepper for seasoning

Method
 

Preparation
  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Once the oil is hot, sprinkle in the flour. Stir constantly for about 1 minute until smooth and slightly bubbly.
  3. Mix in the chili powder, garlic powder, onion powder, and cumin, stirring for another minute to let the spices bloom.
  4. Slowly pour in the tomato sauce while stirring, ensuring everything is well incorporated.
  5. Gradually add the vegetable broth and continue to stir until the mixture is smooth and combined.
  6. Allow the sauce to simmer for 5-10 minutes, stirring occasionally until it thickens. Season with salt and pepper to taste.
  7. Use immediately or let it cool down if storing for later!

Notes

Store homemade sauce in an airtight container for up to 1 week in the fridge or up to 3 months in the freezer. Reheat on the stovetop or in the microwave.
