For the Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Ensure it is at room temperature

  • 1/4 teaspoon salt
For the Filling
  • 2 large eggs Use room temperature
  • 3/4 cup light corn syrup
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans, chopped

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan (typically an 8x8 inch) with non-stick spray or line it with parchment paper.
  2. In a medium bowl, cream together the softened butter and sugar until smooth. Gradually mix in the flour and salt until the dough starts to form. Press this mixture into the bottom of the prepared pan evenly.
  3. Place the crust in the oven and bake for about 15 minutes or until lightly golden.
  4. In a separate bowl, whisk together the eggs, corn syrup, brown sugar, and vanilla extract until well combined. Stir in the chopped pecans.
  5. Once the crust is done baking, pour the pecan filling over the hot crust and spread it evenly.
  6. Return the pan to the oven and bake for an additional 25-30 minutes or until the filling is set and slightly bubbling.
  7. Allow the bars to cool completely in the pan before slicing them into squares. Serve and enjoy!
