Ingredients
  

Brownie Base
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 large lemon, zest and juice Fresh lemon enhances the flavor.
  • 1 teaspoon vanilla extract
  • to taste Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a large bowl, whisk together granulated sugar and melted butter until well combined. Add in the two large eggs and continue mixing.
  3. Incorporate the zest and juice of 1 lemon and vanilla extract into the mixture.
  4. In another bowl, blend together flour, salt, and baking powder. Gradually add the dry mixture into the wet mixture, stirring until just combined (avoid overmixing!).
Baking
  1. Pour the batter into your prepared baking pan and spread it out evenly.
  2. Bake for 20-25 minutes, or until a toothpick comes out clean when inserted in the middle.
Cooling & Serving
  1. Once baked, remove from the oven and allow to cool for about 10-15 minutes in the pan.
  2. Dust with powdered sugar, if desired, cut into squares, and serve!

Notes

To freeze, wrap individual brownies tightly in plastic wrap and then place them in a freezer-safe container. They can last up to 3 months in the freezer.
