  • 250 g Biscoff cookies about 9 oz
  • 1 cup strong coffee, cooled
  • 2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder, for dusting

Preparation
  1. Brew your strong coffee and let it cool completely. This will be used to soak the Biscoff cookies.
  2. In a bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer, whip the mixture until soft peaks form.
  3. In a separate bowl, gently fold the mascarpone cheese into the whipped cream until smooth and creamy.
  4. Dip one side of the Biscoff cookies into the cooled coffee for a few seconds. Make sure not to soak them too long, or they will fall apart!
  5. In a baking dish, layer the soaked cookies at the bottom, followed by a generous layer of the mascarpone mixture. Repeat the layers until all ingredients are used, finishing with a mascarpone layer on top.
  6. Cover the dish with plastic wrap and refrigerate for at least four hours, or overnight for best results.
  7. Before serving, dust the top with cocoa powder and get ready to enjoy your scrumptious Easy Biscoff Tiramisu!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to a month, thawing in the refrigerator before serving. Avoid soaking the cookies too long to prevent sogginess.
