Easter Bunny Poke Cake

A fun and festive dessert perfect for spring celebrations! This poke cake features a moist white or yellow cake filled with colorful pudding, topped with fluffy whipped topping and decorated with Easter candy.

Ingredients
  

  • 1 box white or yellow cake mix plus ingredients listed on package
  • 2 boxes 3.4 oz each instant pudding mix (vanilla, cheesecake, or white chocolate)
  • 4 cups 960 ml cold milk
  • 1 tub 8 oz whipped topping, thawed
  • Food coloring pastel shades, optional
  • 1 cup shredded coconut tinted green (for “grass”)
  • Easter candy jelly beans, mini eggs, bunny Peeps, etc.

Equipment

  • 9x13-inch baking dish
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Wooden spoon (for poking holes)
  • Spatula

Method
 

  1. Bake cake in a 9x13-inch pan according to package directions. Allow to cool slightly.
  2. Using the handle of a wooden spoon, poke holes all over the cake, about 1 inch apart.
  3. In a bowl, whisk together pudding mixes with cold milk until smooth. If desired, divide pudding into bowls and tint with pastel food coloring.
  4. Pour pudding evenly over cake, letting it fill the holes.
  5. Spread whipped topping over the cake to cover completely.
  6. Sprinkle with green-tinted coconut to resemble grass. Decorate with Easter candy and Peeps.
  7. Chill cake for at least 2 hours before serving to allow pudding to set.
