Ingredients
  

For the Salad
  • 1 pound ground beef (or ground turkey) Can swap for ground chicken or black beans.
  • 1 packet taco seasoning Follow package instructions for water addition.
  • 1 head romaine lettuce, chopped Use fresh and crisp lettuce.
  • 1 cup cherry tomatoes, halved Add for a pop of color and sweetness.
  • 1 cup shredded cheese (cheddar or Mexican blend) Choose your favorite cheese.
  • 1 cup corn (canned or frozen) Add for sweetness and texture.
  • 1 whole avocado, diced Adds creaminess.
  • 1 cup Doritos (taco flavor works best) Add just before serving for crunch.
  • ½ cup ranch dressing (or your favorite dressing) Toss salad with dressing before serving if desired.

Preparation
  1. In a skillet over medium heat, brown the ground beef until fully cooked, typically taking about 5-7 minutes. Drain any excess fat.
  2. Once the beef is browned, add the taco seasoning and follow the instructions on the package, usually adding a bit of water and letting it simmer for a few minutes.
  3. While the meat is cooking, chop the romaine lettuce and place it in a large salad bowl.
  4. To the lettuce, add the cherry tomatoes, corn, diced avocado, and shredded cheese.
  5. Once the ground beef is seasoned and ready, add it into the salad bowl and gently mix everything together.
  6. Just before serving, sprinkle the Doritos over the salad to maintain their crunch.
  7. Drizzle ranch dressing over the top, toss if desired, and serve immediately. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days, but keep Doritos separate to maintain their crispiness. Reheat ground beef in a skillet over low heat if necessary.
