Ingredients
  

For the chicken marinade
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon soy sauce Low-sodium or coconut aminos can be used as substitutes.
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 tablespoon garlic, minced
  • to taste salt and pepper
For assembling tacos
  • 8 crispy taco shells Warm in the oven or microwave prior to filling.
  • 1 cup shredded cabbage For topping.
  • to taste Sriracha mayo Mix mayonnaise with sriracha to taste.
  • 1 bunch fresh cilantro, for garnish

Method
 

Preparation
  1. In a bowl, combine diced chicken, soy sauce, sesame oil, minced ginger, and minced garlic. Season with salt and pepper. Let it marinate for 10 minutes.
Cooking
  1. In a skillet over medium heat, cook the marinated chicken for about 6-8 minutes until cooked through and no longer pink.
  2. While the chicken is cooking, warm up the taco shells in the oven or microwave to your liking.
Assembly
  1. Fill each taco shell with the cooked chicken, then top with shredded cabbage and a drizzle of sriracha mayo.
  2. Sprinkle fresh cilantro on top for an extra burst of flavor, and you’re ready to enjoy!

Notes

Store any remaining chicken in an airtight container in the refrigerator for up to 3 days. Reheat chicken in the microwave or stovetop. Freeze cooked chicken (without shells) for up to a month.
