  • 2 lbs thinly sliced beef (such as ribeye or flank steak) Slice the beef thinly for optimal tenderness.
  • 1 large onion, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Cheese and Bread
  • 8 slices provolone cheese Alternatives such as Swiss or mozzarella can be used.
  • Hoagie rolls or sub sandwich bread

Method
 

Preparation
  1. Season the sliced beef with salt and pepper. You can slice the beef the night before to save time.
  2. In your crockpot, layer the beef, onion, and both bell peppers. Pour the beef broth and Worcestershire sauce over the top.
Cooking
  1. Cover the crockpot and cook on low for about 6-8 hours until the beef is tender and flavors meld beautifully.
  2. About 15 minutes before serving, lay the provolone cheese on top. Cover again until the cheese has melted.
Serving
  1. Serve the cheesy beef mixture in hoagie rolls, and enjoy your delicious creation!

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days. Freezing is also an option for 2-3 months. Reheat with a splash of broth or water to retain moisture.
