  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour For dredging the chicken
  • 1/2 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 3 tablespoons capers, drained
  • 2 tablespoons butter For finishing the sauce
  • 1 tablespoon olive oil For searing the chicken
  • Salt and pepper to taste

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper. Lightly dredge them in flour, shaking off any excess.
  2. In a skillet, heat olive oil over medium-high heat. Sear the chicken breasts on both sides until they are golden brown (about 3-4 minutes per side).
  3. Place the seared chicken in the crockpot. Pour in the chicken broth, lemon juice, and stir in the capers.
Cooking
  1. Cover and set the crockpot to low for 6-8 hours, or high for 3-4 hours.
  2. Once cooked, stir in the butter until melted.
Serving
  1. Garnish with fresh parsley and enjoy your delicious Crockpot Chicken Piccata!

Notes

For a thicker sauce, mix a tablespoon of cornstarch with a bit of water before adding it to the crockpot during the last 30 minutes of cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months.
