Preparation
- Season the chicken breasts with salt and pepper. Lightly dredge them in flour, shaking off any excess.
- In a skillet, heat olive oil over medium-high heat. Sear the chicken breasts on both sides until they are golden brown (about 3-4 minutes per side).
- Place the seared chicken in the crockpot. Pour in the chicken broth, lemon juice, and stir in the capers.
Cooking
- Cover and set the crockpot to low for 6-8 hours, or high for 3-4 hours.
- Once cooked, stir in the butter until melted.

Notes
For a thicker sauce, mix a tablespoon of cornstarch with a bit of water before adding it to the crockpot during the last 30 minutes of cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months.
