  • 2 medium zucchinis, grated and excess moisture squeezed out Ensure to squeeze out excess moisture for crispiness.
  • 1/2 cup all-purpose flour
  • 1/2 cup grated parmesan cheese Can substitute with another cheese if desired.
  • 2 large eggs Acts as a binding agent.
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced For added flavor.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1 tablespoon fresh parsley or dill, chopped Use either fresh herb for flavor enhancement.
  • Olive oil spray for a crispy finish Lightly spray before baking.

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis using a box grater and place them in a clean kitchen towel. Squeeze out the excess moisture.
  3. In a large mixing bowl, combine the drained zucchini, flour, parmesan cheese, eggs, onion, garlic, salt, pepper, and herbs. Stir until well mixed.
  4. Scoop out the mixture using a tablespoon and shape it into patties. Place them on the prepared baking sheet, leaving space between each fritter.
  5. Spray the tops lightly with olive oil spray, then bake in the preheated oven for 20-25 minutes, flipping halfway for even browning.
  6. Once golden brown and crispy, remove from the oven and let cool slightly before serving.

Notes

For best results, squeeze out as much moisture from the zucchini as possible. Experiment with spices like cumin or paprika for added flavor.
