- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate the zucchinis using a box grater and place them in a clean kitchen towel. Squeeze out the excess moisture.
- In a large mixing bowl, combine the drained zucchini, flour, parmesan cheese, eggs, onion, garlic, salt, pepper, and herbs. Stir until well mixed.
- Scoop out the mixture using a tablespoon and shape it into patties. Place them on the prepared baking sheet, leaving space between each fritter.
- Spray the tops lightly with olive oil spray, then bake in the preheated oven for 20-25 minutes, flipping halfway for even browning.
- Once golden brown and crispy, remove from the oven and let cool slightly before serving.
Notes
For best results, squeeze out as much moisture from the zucchini as possible. Experiment with spices like cumin or paprika for added flavor.
